my mom's wicked banana bread

I've had a few people ask me for this recipe, so I thought I'd just post the damn thing and get it over with. The reason this recipe is so great is the myriad substitutions you can make with the ingredients. Note: it also makes muffins.

• 3 ripe bananas
• 1/3 cup of olive oil (you could use light olive oil, if you prefer the flavour)
• 1/2 cup of sugar or honey or maple syrup
• 1 tsp salt
• 1 egg
• 1 tsp vanilla
• 1-1/2 cups flour*
• 1 tsp wheat-free baking powder
• 1 tsp baking soda
• 1/2 cup chopped walnuts or coconut or Ghiradelli double chocolate chips (optional)

Mash bananas; add oil, salt and sugar. Blend well; add egg and vanilla. Mix well and stir in flour slowly. Add baking soda and baking powder. Add optional ingredients last. Do not overmix. (Mix only until all ingredients are wet.)

Bake at 325 C for:

15-20 minutes (muffins)
30-45 minutes (loaf)

[*Instead of regular bleached wheat flour, try 1-1/2 cups of spelt, or rice flour or try mixing flours, like 1 cup of spelt with 1/2 cup of rolled oats.]

In baking, it's all about substituting dry ingredient for dry ingredient and wet for wet, so this recipe shouldn't work with all the variations.
